Ingredients

1/2 pound (0.2 kg) potatoes, peeled
2 tablespoons oil
1/4 small onion, diced
1/4 cup green peas, smashed
1 tablespoon curry powder
1/2 teaspoon chilli powder
1 teaspoon sugar
salt to taste
1 egg white
spring roll wrappers, cut into 3 equal-sized rectangle pieces
oil for deep-frying
Instructions

Boil the potatoes for 10 minutes or until they are completely cooked through. Drained and let cool. 
Peel off the potato skin, and break and mash the potatoes using the back of a spoon.
Heat up a skillet and add the oil. Sauté the onion until aromatic before adding the potatoes and green peas, curry powder, chilli powder, sugar and salt. Cook for a few minutes. Remove from the skillet and let cool.
Scoop 1 heaping teaspoon of the filling and place at the top centre part of a piece of wrapper. Brush the outer edges of the wrapper with the egg white, fold and form the Samosa into a triangle. 
Pinch the edges and all corners to make sure they are sealed tight and there is no leakage.
Repeat the same until the filling is used up.
Deep fry the samosa at 350°F (176°C) until golden brown. Remove from the oil using a strainer or slotted spoon, and transfer to a plate lined with paper towels. Serve warm.

TO THE Woman WHO IS SLOWLY FADING AWAY...

To the woman who has lost their spark.
To the people whose get up and go, has well and truly gone.
This is for you.

This is to remind you, that you don’t have to be everything to everyone, every day.
You didn’t sign up for that.

Remember when you used to laugh? Sing?
Throw caution to the wind?
Remember when you used to forgive yourself more quickly for not always being perfect.
You can get that back again.
You really can.

And that doesn’t have to mean letting people down or walking away.
It just means being kinder to you, feeling brave enough to say no sometimes.
Being brave enough to stop sometimes.
And rest.

It starts the moment you realise that you’re not quite who you used to be.

Some of that is good, some of that is not.
There are parts of you that need to be brought back.
And if anyone in your life is not okay with that… they are not your people. Your people will be glad to see that spark starting to light up again.

So, if you have been slowly fading away my friend, this is the time to start saying yes to things that bring you joy and no to things that don’t.

It’s really pretty simple.

My Mom once told me that she walked into a room where a couple of friends were discussing her, they didn’t know she was there.
She shook her head, smiled and walked away.

My Mom also told me that she had a friend who talked bad about her, she never knew that Mom found out, Mom never mentioned it.
She smiled and walked away from this friendship.

She told me she had family who chose to shift her out of their life because she stood up for herself for a change.
And because she stopped crossing oceans for them when they would not even help her cross a bridge.
She smiled, shook her head and walked away.

So I asked her how she could just walk away from people that betrayed her while pretending to be her friends or family.

She answered that every time she came to a crossroad like that, she had to decide who will be going forward on her journey with her.
This showed her who she cannot take along with her.

So she explained to me that you should never get mad at a person who betrays you, even in the name of friendship or family.

Just gracefully bow out and enjoy your journey with all the new people you’ll meet along the way.~
